Ingredients

  • ½ cup egg whites

  • ½ low-fat cottage cheese

  • 1 whole egg

  • 1 tbs feta cheese

  • Dash of red pepper flakes

  • 4 oz 93% lean ground beef, cooked

  • ½ cup raw baby spinach

  • 1 tsp EVO (extra virgin olive oil)

  • ¾ cup sauteed vegetables of your choice (mushrooms, onions, broccoli,

    cauliflower, tomatoes, zucchini)

Preparation

1. Preheat oven to 350° F. In a 4 x 6” Pyrex dish, brush the bottom and sides with

extra virgin olive oil.

2. In a blender, combine egg whites, cottage cheese and 1 egg. Blend until smooth.

Add a dash of red pepper flakes, salt, and pepper and blend again until

combined.

3. Pour egg mixture into the prepared dish. Add the 4oz of cooked beef and mix.

Top with the feta cheese and spinach and bake at 375° F for 35 minutes.

4. You can precook multiple bowls in individual servings and freeze until ready to

use.
